Chicken parmesan with Hellmann’s

My daughters are notoriously picky eaters. And it’s not like the little one gets it from her big sister, as they’re complete opposites. Maura (4 years old) is all about pasta, tofu, potatoes, seafood… nothing green anywhere near her plate. Not even a tiny little pea. She loves sauces, though. Even spicy curries. Everything has to be well combined; each bite full of flavor. Maya, on the other hand, wrinkles her nose anytime I attempt to get her to try fish; she’s a carnivore through and through, but she does like her veggies… she’d eat broccoli every night if I let her! Nothing on her plate can touch, however, and she eats each food on her plate separately. First the veggies, then the protein, and lastly the rice or pasta. It’s so weird and incredibly annoying. I tell myself that they’ll grow out of all this soon enough, right? RIGHT?

When the girls help me out in the kitchen, they’re much more likely to eat whatever it is we make. A few nights ago we prepared Hellmann’s ‘Succulent Chicken Parmesan’ together. It was so easy and delicious! Here’s the recipe:

SUCCULENT CHICKEN PARMESAN

4 servings
Prep Time: 10 minutes       Cook Time: 23 minutes

INGREDIENTS

  • 1/4 cup Italian seasoned dry bread crumbs (I used regular bread crumbs and added my own spices!)
  • 1/4 cup grated Parmesan cheese
  • 4 boneless, skinless chicken breast halves (about 1-1/4 lbs)
  • 1/4 cup Hellmann’s® or Best Foods® Real Mayonnaise
  • 1/2 cup Ragu® Old World Style® Pasta Sauce
  • 1/2 cup shredded mozzarella cheese (about 2 oz)

DIRECTIONS

  • Preheat oven to 425°.
  • Combine bread crumbs with parmesan cheese in shallow dish; set aside.

  • Add chicken and Hellmann’s Mayonnaise to large plastic bag; shake to evenly coat.

  • Remove chicken, then lightly coat in crumb mixture.

  • Arrange chicken on baking sheet.

  • Bake 20 minutes.

  • Evenly top chicken with pasta sauce, then mozzarella cheese. Bake an additional 3 minutes or until chicken is thoroughly cooked and cheese is melted.

.The chicken was juicy, with just enough cheese and sauce in each bite. I served it with broccoli and a little whole-wheat penne. The girls cleaned their plates. Well, except Maura, who pushed the broccoli around until I couldn’t take it anymore… but the chicken she loved!

    Son number 2 would rather NOT have things combined, like a stirfry or casserole, so before I combine the ingredients, I give him the separate items on his own plate, and only then do the combining.

    I find meals they like and add different ingredients to make them taste slightly different. That way, they get to taste different things and develop a liking for them.

    When my children were young I avoided things they really hated. Thank God there wasn’t that much. I also might serve a couple of veggie. They could have one or both.

    I am blessed with the most unpicky eater in the world, but since she has tons of extra curricular activities we are short on time. I have to rely on crock pot meals quite often, and we do eat out a lot.

    I try to get an early start on prep work for dinner by doing all i can beforehand. that way I’m not rushing around like a mad women when its time to eat. It just becomes alot simpler when I spread it out a little.

    I fix dishes I know they like and the rule is you must try one bite of each food. I don’t overload their plates either.

    I always manage to have my son’s favorite items on hand. Fish Sticks, hot dogs, and chicken tenders. We also have breakfast for dinner some nights and this is a big fave of his.

    i have 2 picky eaters in my house! My husband and my 3 year old. I find things that they like and enhance them a little bit! I found my daughter and husband both love chicken and rice! So i will make sesame chicken, fried chicken or any chicken and they will always eat it!

    My 4 year old is a picky eater and right now our dinners are very stressful. He cries and refuses to eat. They way me and my husband deal with it is that he is not allowed to leave the table until he eats all his food…. It doesn’t work but only after a lot of crying 🙁 WIsh I had a better way to deal with it!
