As I mentioned in my previous Campbell’s post, I make an effort to live heart-healthy every day, and part of this is making good food choices and cooking with healthier ingredients.
I like to have plenty of canned ingredients on hand for those cold days when I can’t bear the thought of stepping outside, much less going to the grocery store! Campbell’s Healthy Request® Condensed Soups are one of those convenient staples that are always in my pantry. I rarely have soup straight out of the can, though, because it’s so easy to transform it and make it my own. Try adding one element from each of these categories:
• New Flavor Combinations. Dried or fresh herbs like basil or cilantro, a dash of a low-sodium poultry seasoning, a squeeze of lemon or lime juice, or a drizzle of pesto or curry paste.
• Veggies. Diced tomatoes, corn, spinach, chunks of potato, roasted bell peppers, mushrooms, and slices of avocado are a few of my favorite soup additions. It’s also a good way to use up leftover salsa!
• Protein. Shredded chicken, crumbled bacon, sliced sausage, beans, or a poached egg.
• Texture. Crushed tortilla chips, quinoa, croutons, roasted pumpkin seeds, a sprinkle of cheese, a drizzle of coconut milk, or a dollop of sour cream or Greek yogurt all add a nice finish to soup.
This was my lunch… a southwest twist on tomato soup! I added some chunky salsa and half a cup of leftover black beans to a can of Campbell’s Healthy Request® Tomato Soup, stirred in a drizzle of coconut milk, topped it with sliced avocado and tortilla chips, and finished with a squeeze of fresh lime juice. Really delicious and filling! The creaminess of the avocado and coconut milk compliments the tang of the tomato and lime.
